 Fruity Coconut Mush 

Mush: 

1/2 cup cooked barley or grain of choice (oats, basmati rice, amaranth, etc.)

1/2 cup organic coconut milk

1/4 - 1 teaspoon coconut sugar, optional

 

Topping:

1  1/2 Tablespoons ghee

1 sliced peach or about 1 cup seasonal fruit of choice

Pinch cardamom powder

Optional: Walnuts, pistachios, coconut shreds, maple syrup

 

Cook grain according to direction. In a blender on low, mix cooked grain with coconut milk and coconut sugar. Add water as needed. Melt ghee in saucepan. Add sliced peaches (or fruit of choice), sprinkle with cardamom, and sauté for about 3-4 minutes, turning occasionally.

Spoon mush into serving bowl and top with cooked fruit and optional toppings of choice. Enjoy!
