Autumn Stew
This nourishing vegetable stew is particularly pleasing during vata season. The grounding vegetables with tastes of fall, combined with a delicious grain (I prefer quinoa for the protein content), provide a super satiating taste experience. Feel free to substitute vegetables for your favorites, but keep them seasonal!
This soup does wonderfully in the crock-pot, on low, for 6+ hours. Saute your onions and leeks and then add everything to the pot (except the coconut milk and green beans) for 4-6 hours and then add coconut milk and green beans for the last hour or so of cooking.
